Made really good kabobs for dinner, thai-style, in spicy sweet and sour sauce, with rice, carrots and peas.
GARLIC AND GINGER RUB
12 cloves garlic pressed
2 tbsp peeled and minced ginger (I grated it)
2 tbsp freshly ground black pepper
2 tbsp corriander (left it out, ick!)
1/2 cup fresh cilantro (also left it out, gross!)
2 tbsp grapeseed oil
SPICY SWEET AND SOUR DIPPING SAUCE
1/4 cup white vinegar
1/3 cup sugar (I wish I had used brown, to colour it slightly)
3 cloves of garlic pressed
1 tsp red pepper flakes (I used 1/2 tsp)
1 to 2 teaspoons of Asian fish sauce
Mix the rub, cut chicken into chunks, marinade for 2-4 hours.
Oh geeze, I just finished reading the recipe for the dipping sauce and realized I was supposed to heat it. HAHAH, oh well, it works without heating. It was spicy but even Reagan loved it!
Reagan and I did over an hour and a half of math work and phonics work, and she did it without a complaint. She did tell me that her mom gives her a reward every time they do it, if she does it with a good attitude. I told her that was a great idea, but that we just expected a good attitude, and her reward is a trip to Kings Dominion at the end of summer. :) Oh, and a sticker on the calendar showing she did it. She was fine with that.
We did a grocery shop at Wegmans this afternoon, for our 4th of July food, along with all of Virginia. We are doing hotdogs, homemade burgers, salad, corn on the cob, potato chips. Dessert is going to be chocolate brownie with strawberries, blueberries and vanilla ice cream. Reagan and I made jello jigglers in the shape of stars, so we'll have some of those on it too. Her mom and step dad are invited to dinner tomorrow night, and to the fireworks, not sure yet if they are coming or not.
Went for a walk to the battlefield, saw a rabbit and then saw a groundhog.
Pretty nice day today with Tim and Reagan. Now it's bedtime and time for me to make brownies!
