If I make a turkey or whole chicken or ham, I put the bones and meat into a big huge pot with a lot of water. I save all my onion skins, pieces of onion, add celery and celery tops, any other veggie pieces I have like carrot peels, mushroom stems, and throw in about 5 or so whole, chopped onions. Then I simmer that for 1-3 days. When it's done, strain it into a large bowl, and I put it in containers for the freezer, or start soup.
